Can't help you, I didn't have any help with the greenies I rode... and I just chased them into a canter. It was usually fast and messy, but they would figure things out and then I could get them back. Once they were used to it, they just went into it normally... definitely not a good method if you don't have a saddle, though. And there's probably a better way to do it anyways.

Maybe try cantering on a lunge line or in a round pen. If you make a definite verbal cue for the horse to learn, then you can use the cue when you're asking her from on top. You'll be able to use less leg, she'll probably be less confused because she's used to the command... etc.

That's all I've got, but I'm sure other people will be able to give advice about asking for a canter with a young horse while still staying balanced and in control.
