I'm very similar to Cali. I do train all my horses on the lunge line first with voice commands and then when they're under saddle I also use the voice commands but don't worry too much if they don't get it right away. Also when she does finally canter don't worry if she's on the right lead, just praise her for cantering. All the collection, speed, leads can come later.
