It took me longer to find time to do some searches than I thought, but if anyone is still interested, I picked out a couple horses that I think would make good upper-, middle- and lower-end prospects. I had a horse in mind for the upper level prospect, but he doesn't have any video online. Instead, I found this mare:

I believe she's only 2 in the video, so there isn't any footage of her jumping, but I love her way of going. She has a little more knee than totally ideal, but she has a huge step and looks soft and balanced, especially for an obviously green baby. Obviously, her jump is going to make or break it, but I love her as a young prospect.

I'm going to use this guy for my mid-level horse, although I was kinda wavering on that. I'm not entirely convinced he couldn't step up to the 3'6". He looks like he has the step to get down the lines and he has a nice canter. I'd need to see what he did over a real jump to see if he's going to use himself better over something bigger or if he's always going to jump kinda flat. Anyway, I think he could easily do the 3' at the rated shows, so I'm calling him my mid-level horse - I'd be interested to see what everyone else thought of him though!

For my lower end horse, I found this guy:

He looks like a pleasant guy, he has nice changes and his jumping form is decent. While he doesn't pound the ground like a draft horse, he doesn't have the same softness as a top hunter and he's certainly got more knee action than is ideal. Also, he doesn't want to reach down and use his head and neck over the fences as much as I'd like to see, which is what I think would limit him at the AAs.
