When do you consider a horse finished? I ride dressage and jumping, and certainly the horse I ride or rode dressage with I've never considered finished. There's always something new to learn or something to improve. Horses I jump I also keep schooling in dressage.
I train my horse in the arena 4-5 days a week, the other days we go trail riding. About once every to weeks we do a jumping training or some cross country training. I don't do a lot of shows, maybe once every month. He rarely gets a day off, and I don't think horses think of a day off like we do, I don't think they really need it. I usually only ride him for about 45 minutes to an hour every day, the rest of the day he's out in the pasture with the other horses.
We do dressage, showjumping and sometimes eventing. Horses I only compete in showjumping have pretty much the same training schedule, I usually don't do a jumping training more often than once every two weeks, although I might do some cavaletti work during a dressage training once a week.
I want my horse to perform as good as possible on a show, and I can't expect him to be supple and in shape if I only train him once or twice a week.
