I ride in these all winter: http://www.amazon.co.uk/Cabotswood-Unisex-Brecon-Chestnut-cbrechbrwa36/dp/B002P3KHWG

No, you don't get as good a 'feel' in them, but if I didn't have something this substantial my feet and lower calves would be totally numb by the time I got in the saddle anyway - hardly any better.
I've never had an issue with them being too large or feeling clunky, or as if they would get stuck in a stirrup, but then I have extremely small feet anyway (I wear a UK size 4 in my boots).

If you're struggling, I would say the most important thing is to ensure whatever you wear is WATERPROOF and that you have space for multiple layers of socks. Make sure the layer closest to your skin is NOT cotton, but preferably some kind of moisture-wicking material, then covered by natural wool. Don't be tempted to cram too many layers into a too-small boot, as you may restrict circulation and actually make your feet colder.
