Ha. One of the guys involved in this project, from the Science Gallery in Dublin where the cheese was exhibited, spoke at a conference I attended last week. I don't know the exact details of the project's origin, or funding, but I assumed it wasn't done as any kind of 'serious' research (it's not 'research' at all, in fact) but as a project to populate this exhibition and further its aims to demonstrate the possibilities of synthetic biology and generate public interest in the science. It was massively successful. The Science Gallery are hoping to open a new exhibition site in London soon - can't wait!

In the questions after his presentation, somebody asked 'what did the cheese taste like?' The answer was 'Smelling was allowed. Tasting was not. For legal reasons, people were only allowed to eat their own cheese.'
