Do you know what kind of grapes you have? Eating varieties don't necessarily make good wine. My husband makes wine from grapes, but I stick to kits. I'm happy to drink his, of course!
Apples- I make pies and freeze them (unbaked). Apple jelly is easy to make. You can slice and freeze them (add ascorbic acid so they don't brown.) If you really have a lot, try making cider. There are all kinds of apple preserves you can make (apple butter is one of my favorites.)
