Cats did not evolve to cope with cars. They evolved to cope with predators like coyotes, hawks, and the like. That's why even fully sighted cats get crushed by cars, unless they learn (and it's hard to learn when you're dead) to avoid them and watch for them, they get smooshed. It's not an innate ability, it's one they have to learn, and sadly, too many die before they figure it out.

While it's true that cats have very quick reflexes, they are designed to catch (and run away from) creatures with similar reaction times. Cars do not follow the same patterns as an animal does, weighs more than any animal a cat would naturally encounter, and moves at speeds unattainable to any land animal. (Yes, I know cheetahs are fast, but how many house cats run into cheetahs?)
