The trick to going the prove-the-offspring route, from what I've seen, is to REALLY choose good mares for the stallion (or stallions for the mares, I suppose), and don't start with crap. Start with individuals from proven lines, and the conformation to back it up.

And don't breed a bunch of mares until you've proven what's already out there. That much is a given.

If you go that route, you'll at least produce animals that are well-conformed and stand a good CHANCE of being good at SOMETHING, even if it's not the intended discipline.

If you go the 'lets breed him to everything with a hole to see what happens' route... you're just being an asshat. :lol
