Yes/no about the saddleseat thing. Mostly, just like in every other disclipline the head follows correct training from the rear. There is a lot more focus on the minutia of detail on where the head is in saddleseat, but I've never considered a horse I trained to be "set" in the head. There are less people who have what you guys would consider "normal" training that understand back to front in saddleseat so you'll hear a lot about the head without real understanding of the why/how it gets there.
