The information I've read on that says that it's actually a myth that came from a misunderstanding of a very old study done where blood vessels were found in specimens of the breed that were suspected to indicate that a seventh molar may develop in future generations, but that it's actually not uncommon to other breeds.
Ah, gotcha - it was one of those facts I've always known, rather than finding from a reliable source. I'd been wondering why it never seemed to be mentioned in proper papers or anything! Mind-you, horse genetics are varied enough that I wouldn't be surprised if variable dentition did show up somewhere or other in time.
