Do not ruin your knee more just to lunge him. The amount of lungeing you'll be able to do with him won't keep him in the shape you want.
Either find an approved leasor, find someone who you approve that will work him well enough (like JacksMom) for FREE (benefit to you both, like someone doing their Level 1 Coaches exam and needs a horse...) OR let him get out of shape, and when YOU'RE healed, you'll ALSO need to take it long and slow to get back in riding shape, and both of you could do that at the same time.
Seriously don't push it!!!!
Topic 2:
You can get a neck stretcher for switching between the legs/any ring on the surcingle, OR use the lunge line as the dynamic movement (far side bit, to clipped ring on top ring of surcingle, to and through nearside bit to your hand) you could get him working on trotting/cantering over cavaletti gymnastics on the lunge...
Basic trail class stuff, have him walk/trot/canter over tarps, through setups with fluttery things... get him to pull something like a tire if you have a harness available or western saddle... just hang out with him!
For 3.5 months I mostly did a wee bit of lungework but mostly just walked and sat and read books to Merlin. I had a broken arm though but the concept is similar - take it slow.
I know it's very very frustrating cutting training short right in the middle of a season, I'm sorry you've hurt your knee, but if you want to sustain any ability to ride in the future really don't try to push your limits.
Maybe teach a young, bright, responsible kid how to lunge him! Anything where you sit and coach, and they do the body work for YOU. Then they get the benefit of becoming a better horseperson too...
