I think the way it should be handled is like this: Thank you for your input into my eating habits but I do know what MY body needs and wants. Or, I appreciate your concern but I would appreciate it if you wouldn't comment on my food choices. I do not comment on yours so I expect the same courtesy.
I think these are great responses.

I know that a lot of people with weight problems (or perceived weight problems) will constantly feel judged by what they eat. And let's face it, they are usually right. So when they see someone like you eating healthy, it is an opportunity to shift the criticism. Often people who do this will not think that you would possibly be offended by it, becasue you are thin, and therefore immune to food-related criticisms.

That's how I see it anyways.

As someone who doesn't eat meat, trust me, I feel your pain. "Here, just have a bite! It's vegetarian steak! MOOOOOO! Can you imagine it's face when it died? I live animals too... next to my potatoes. Don't worry, you can have a salad. Please, it's just a little bit of bacon, pick it out. It's already dead, so what's the difference? What DO you eat? Straw? Why don't you eat fish? Fish isn't meat. Besides, they're stupid. Turkeys are dumb, they deserve to be eaten by us. Are you going to call PETA on me for having this hamburger? Doesn't it look amazing? You want my lettuce? Oh no wait, it touched the cow so you won't eat it right? No, I won't try your food. If you won't eat mine, why should I eat yours? How can you LIVE without meat? I hope you don't mind, but I used chicken stock in the vegetable soup. I figured you'd still eat it. You won't? How ungrateful. Here watch me cook this lobster. He'll start screaming in a minute. There meat in the spaghetti sauce, but I told the waitress you'll just pick it out." These are comments I get EVERY TIME I eat with my extended family and/or work. Please keep in mind that I never say anything about being vegetarian, except answer questions if they are asked to me. Even when we go to a restaurant that has NO items on the menu without meat, I can usually find something and won't complain. But then I'll get told I'm difficult because all I'm eating is a fry and coleslaw. My brother is Vegan, and gets it 1000x worse than I do.
