Um, no not every artist cares how people view their work, and most of them know that not everyone will view their work the same way, an artist statement is not to tell you what to see, its to tell you why they made the work. There is no truth in art, no matter the medium it is simply a representation so you cant say an artist statement must be the truth. Just because someone sees something that the artist didnt intend does not make them wrong, and most artists are open to that. Art gets sold because people like it. You make it seem like there is some blasphemy in seeing art not the way the artist intended, but I will tell you that most artists are actually very interested in the other ways that people view their work.

And Janieta Eyre is neither an asshole nor is she a hack. She hates writing about her work so she has written several fake artist statements. Her work is often about duality so in one she wrote that she was born a conjoined twin but during the surgery the other one died and that why she always works with duality. Its not true. Who cares?
