I have already made sausage rolls with cranberry and bramley apply sausagemeat and tomorrow I will make more with apricot and almond filling. They last about 2 minutes. They'll be part of the buffet Christmas eve along with chicken skewers in various flavours, cold meats (have this gorgeous black forest ham...) pate, cheese and chutnies, sausages in bacon etc.
Christmas day we need to stuff the turkey crown and cover it in maple-cured bacon (OMNOMNOM) with roasted chestnut sausagemeat stuffing balls, cranberry sausage stuffing parcels wrapped in pancetta with onion relish. Honey-roast parsnips and carrots, marrowfat peas (my request), sprouts (eurgh, but I will inevitably be made to eat one), maybe red cabbage and goose-fat roasted potatoes for veg.
Oh, and Christmas pudding with brandy cream. *drools*
Peppermint creams! I need to get me some christmassy-shaped cookie-cutters and various food dyes for these, though.
And we still need to cook the ham that's been marinading with sweet molasses...
And we've got a TON of plums that I need to do something with...I should probably do a tart but I may just be lazy and poach them in some kind of alcohol/roast them if I can find some honey.
