as for cooking it ....it needs very little seasoning to be honest, make a rub with crushed garlic fresh groudn black pepper and seasoning salt , rub over top and roast
when you cook it cook by itself with a tiny bit of water in bottom of ( metal ) pan
best horseradish comes from fresh horseradish root which you can get at any chinese grocery store dirt cheap ....food process it , if you want it creamy just add a tiny bit of mayo although I prefer it by itself freshly ground
