Honestly Snap, until you own your own property you really don't know. I'm not trying to be a bitch but there are many issues I have with this. No of course not I don't think he's coming to steal from us but I also don't know ONE person that would be happy with someone coming on their property unannounced and doing things, good or bad. Maybe I am a bitch but I hate when people show up to my house without calling first. I find it incredibly rude.

I would think that you could "cancel" the easement situation with nothing more than a letter, perhaps notarized and sent via registered mail. It depends on what you want...do you want the neighbors to stop using ANY of your property?
